Description
Located at the Lewisburg Elks Golf & Country Club. Fresh fish, seafood, steaks, and vegetarian offerings in scenic golf atmosphere.

Rigatoni Alla Pastora
Yield: 6
Ingredients:
1 lb. Spicy Italian Sausage, skinned, cut into 1/2-inch bits
1/2 lb. Ricotta cheese, whipped smooth
1 pt. Tomato sauce
1 lb. Rigatoni
1 oz. Oven-roasted tomatoes
Method:
1. Remove casing from sausage and fry to bits.
2. Add to the tomato sauce.
3. Cook the rigatoni in salted boiling water.
4. Warm the ricotta.
5. Reheat rigatoni. Toss with tomato meat sauce.
6. Place dollop of ricotta on top.
7. Finish with julienne of oven-roasted tomatoes.
Serve and enjoy!
